Planning ahead: This can be made and stored in a clean kilner jar and kept, refrigerated, for several weeks.

Ingredients

7 Vanilla pods, finely chopped (*1) 200g Sugar 200ml Water

Method

Whisk the chopped vanilla pods, sugar, and water in a heavy-bottomed pan over medium heat until the syrup comes to a boil. Remove from the heat, and allow it to cool before pouring into a container. Use wherever vanilla or vanilla extract is called for

*1 Vanilla pods that have already been used for an infusion can be added, as well, but their flavour will be weaker.
